Does anyone have a recipe for the above? And any general handy hints on making jams and preserves. There's an awful lot of blackberries growing around the bottom of my mothers garden and it would be such a shame to waste them. I'm going through a phase of "making do" you see, because I'm flat broke. Have spent much time stitching my clothes (by hand, no sewing machine) and trying to grow vegetables and find different ways to use the hundreds of apples from the tree in our garden.

You and me both lol..I have spent lots and lots of time baking...I also have a mountain of apples that keep falling off two trees in the garden, way too many to do anything with!! I have been making my own bread, so yummy and just made lots of cookies today...baking is so nice...though tend to like baking but not the eating!!! Everyone else does though...
I am thnking of making some jam etc too....use to make a lot of strawberry jam...and pickels and chutneys!!!
I just love cooking, though anything other than completely Vegan my daughter wont eat!! though omiting eggs doesnt seem to make much difference to a recipe! Everything else i make i have to eat or throw away or give to mates!!!! lol

I made fabulous (if I may say so) blackberry jam last year. I shall be picking at the weekend! I copied this one from a website. I didn't use the butter. Sainsbury's sells jam sugar, which has the pectin added. Modern technology!!
cook time 35mins.
1kg/2lbs Blackberries washed
Juice of half a lemon
1kg/2.2lbs sugar with pectin
Knob of butter.
Put the blackberries in a preserving pan with the lemon juice and 120ml/4floz water. Simmer gently for about 30mins or until blackberries
are very soft and are well reduced.
Remove the pan from the heat, add th sugar, stir until dissolved, then
add the butter. Bring to the boil and boil rapidlyfor 4-5mins or until
setting point is reached. Remove any scum with a slotted spoon,
then pot and cover in the usual way. |
