My fave icing is white chocolate butter icing. It goes down a storm on little fairy cakes.
Melt around 100g of good quality white choc and allow to cool.
Put 140g of soft butter or marg in a bowl and whip up a bit as with normal butter icing. Add 140g of icing sugar and mix well until it is quite creamy then add the cooled white choc et voila! It gives coverage to 24-30 cupcakes so should do an average sized cake really well on top and sides. _________________ If life hands you a lemon make lemonade |
