Olive Oil Cut n Come Again CakeMe...the lady who doesnt cook...has made a cake. And a lovely cake it was.
Olive Oil Cut n Come Again Cake is a Spainish biscocho. The oil keeps the cake fresh and mosit for a long time. You have to use a mild rectified olive oil as extra virgin oils are too strong. Though if all you have is this then bring it to the boil (careful!) and then allow it to cool before using it.
Serves 6-8
175g plain flour
2 teaspoons baking powder
1/2 teaspoon of salt
3 large eggs
175g olive oil
175g sugar
1 lemon, juice and zest
Heat the oven to 180c/160c for fan ovens) gas mark 4. Oila small loaf tin and line with greaseproof paper.
Sieve the flour, baking powder and salt into a bowl. Beat the rest of the ingredients until its smooth.
Tip the mixture into the tin and smooth off the top. Bake for 40-45 mins until well risen, firm to the touch. Turn out to cool......then once cool. EAT
