4oz margerine
4oz castor sugar
2 eggs
5oz self-raising flour
1 tsp baking powder
Gas mark 5 for 15-20 mins
You can add 1-2 oz of fruit or chocolate chips, etc. or 2x tablespoons of chocolate powder, or lemon rind, if you want flavoured cake.
My favourite is butterfly cakes with buttercream icing - but I'm sure there are more modern recipes that are a bit healthier...

i love cupcakes so much i know this off by heart:
175 g butter, softened
175 g self raising flour
175 g castor sugar
1 tsp baking powder
3 large eggs
2 tbsp milk
sift flour and baking powder in a bowl, add butter, sugar and eggs and whisk a little, add milk to smooth out the mixture and whisky wisk wisk until nice and smooooth.
spoon into cases (i recommend silicone ones) to about halway up and whack in a hot over for about 20 mins (i say 'hot' because my oven doesnt actually have temperatures printed on as its one my landlord probably got from the back of a lorry- cheap git)
when done, leave to cool on a wire rack
icing -
add 50g butter to icing sugar (as much as you think) until you get a nice fluffy buttercream. you can also add vanilla essence or food colouring but if you do this will make the mixture a little more runny so add some more icing sugar to compensate!
once cool, decorate by piping icing on or applying with a palette knife, then add whatever sprinkles you like!
