Apple and Pear CrumbleI decided to go old skool last night and cook Apple and Pear crumble..something I havent made in around 15 years!
So, feck the recipe I said whilst peeling, coring and chopping one cooking apple, two cox's apples and 2 under ripe conference pears!
Get a big pan, throw in some cinnamon, as much butter as you think you will need for the amount of fruit you have. Toss in the apples first and let them have a party in the butter and cinnamon for 5 mins, throw in the pears and as much demerara sugar as you like, let them cook on a medium heat for a further 15 mins...until you get lots of nice juice.
Get some flour...as much as you think you will need for the crumble, whack in a load of butter, rub them together until you get a breadcrumb consistency, throw in a handful or two of oats then get a couple of handfuls of demerara sugar and rub everything together again.
Trial and error: if you think its too dry add more butter, if you think its too wet add more flour or oatsl
Get a pyrex dish and pour the juicy pulpy apples int o it, get the sugar and sprinkle as much as you want on top, then throw on the crumble mixture.
Cook in the over at 190 degrees for 25 mins or until golden brown on top.
yum....I am going to cook it again tomorrow and this time I am going to grate pink grapefruit zest into the crumble topping and then peel the grapefruit and segments and add the flesh to my pears and apples....yum I hope!

oh and serve with shop bought ready made custard...I like to serve mine cold! tis a nice contrast with the crumble.

I love that approach to cooking, I only occasionally use recipes, and that's normally when I'm trying something new and cooking for friends or family. When it's just me I do enjoy just putting a few things in a pan and seeing what comes out.
