I have a confession to make on this part of the forum which is there is two types of desserts I absolutely adore. Strawberry cheesecake and Chocolate brownies.
The problem is I don't know any good recipes to make either. I found a few for brownies and they turned out terribly after a few tries with each recipe. The strawberry cheesecake is something that we can all get in the supermarket yet I couldn't find a recipe for it!! (Also the best strawberry cheesecake is Sainsbury's for only 99p!!)
Can someone help me with either or point me to the right direction. I'm fed up of feeling guilty every time i use a ready-mix and someone compliments me about how delicious the brownies are.

use the cake mix, soak up the compliments, make sure you dispose of the box throughly!!!!


nigella domestic goddess has a great brownies one though!

let me be clear here.... when you say Strawberry Cheesecake, I assume you mean new york style cheesecake with strawberry on top. Is that correct? Because, if so, I have a recipe that will knock your socks off. Wink

There is a really simple cheesecake recipe in Nigella Express - its not the "proper" baked kind, but it's bloody yummy and ridiculously easy!

125g digestive bisuits
75g soft butter
300g cream cheese
60g icing sugar
1 teaspoon vanilla extract
1/2 tsp lemon juice
250ml double cream

you just blitz biccies in food processer / bash with rolling pin, then add butter so they stick together, and press mix into tin.

Beat together cream cheese, icing sugar, vanilla extract and lemon juice

whip double cream and fold into cheese mixture

plonk the whole lot on top of base and chill for about 3-4 hours, when ready to eat just put your topping on, and bob's your uncle! x

I got that book for xmas! it's a godsend!
Any Nigella book is good her choc brownies are pretty awesome, or you can always try searching la internet!

Or good old Mary Berry, simple and yummy

I love recipe books too....I don't cook nearly enough, but I do like looking through cook books and going 'oooooh!!!'

Though one of my new years resolutions is to start cooking properly more often.  I was given 3 recipe books for christmas, so that';s a start, and in the sales I'm going to go an buy myself one of those multipurpose hand whisk/chopper thingymabobs.

lovely. Those hand whisks are so cool. If a fairy godmother would grant me one wish, I think I would wish for a perfect clean kitchen. I'm sick and tired of cleaning 5 other people's dirty dishes and I hate cooking in a dirty kitchen so cooking at the moment takes a lot of effort at the moment.

I hate washing up....and so does my boyfriend.  but he has no discipline!  We are suppoesed to take it in turns to wash up everyday...but if he doesn't do it, I got twice as much.  So I stopped out of spite a couple of days ago, and nothing's been washed up since. *sigh*  we're on the last few plates and pans.  Sad  We are such students.

Have to do a proper tidy before going back to uni.

Sorry I'm late with this.

Here ya go.

(keep in mind you'll probably have to do measurement and temperature conversions)

What you will need

for the Cheesecake Mix:
3         packs of cream cheese (8 ounces each = 24 ounces)
1.5      cups sugar
1.5      teaspoon vanilla extract
1         quart of sour cream (I know... just trust me)
3         x-large eggs (4 if smaller)

for the Crust:
2         cups graham crackers
3         tablespoon butter
3         tablespoon sugar

Make it!

grease a 10 inch spring pan and lightly sprinkle with some graham cracker crumbs.

Mix the rest of the crumbs with the butter (softened, not liquid) and sugar. Press the mix evenly onto the bottom of the greased pan.

beat softened cream cheese until fluffy, slowly adding sugar and eggs. Make sure to beat the mixture well after the addition of each ingredient.

FOLD in the vanilla and sour cream. Do not beat it in.

Pour into crusted pan and bake at 375 F (190 C) degrees for 40 minutes.

Turn off oven after 40 minutes. DO NOT REMOVE IT FROM THE OVEN. Let it sit in the unopened oven for 1 hour. It is important to NOT open the oven for any reason because the heat needs to dissipate gradually.

Then remove from oven and chill in refrigerator overnight.

Thank you, I believe I can handle my strawberry topping just fine. I think this is the perfect recipe for a British summer when all the strawberries are in season and juicy as ever in June. So Herr when you move to the UK, consider strawberry season!
